Operators of those restaurants on wheels could soon have the ability to locate to different areas of Waterloo.
Waterloo Leisure Services approved permits of two vendors: Taco Loco and Exotic Sno. Those two vendors will now be allowed to set up at various city owned parks as permitted.
Paul Huting, Leisure Services Director, said approved these permits is something entirely new as this was the first time they had been approached by any of the vendors.
"For general park use, this is the first time we’ve had the request. the ordinance gives the commission the authority to permit that and they did grant that," he said.
Huting said operators must approach the Leisure Services for a permit before setting up at parks around the community as there are some areas the trucks will not be permitted, such as areas where there are city-owned concession stands.
Operator of Los Rayas food truck that is parked at the 6 Corners intersection in Waterloo said this opens doors for him and his family to increase business and one day maybe open up a brick and mortar location.
"It’s a lot of hard work, but it pays off. It really does," Antonio Islas said, "Who knows, maybe a year or two from now, we can own a restaurant. That’s the plan anyway."
