WATERLOO, Iowa (KWWL) - This week would've kicked off Irish fest, but unfortunately, celebrations are postponed until next year.
During Irish Fest, vendors usually cook up Reuben sandwiches, but for owner Gary Shoemaker, he wanted to keep it fresh and out of the box.
"I don't want you getting up in the morning, getting in your car, and knowing what you're going to have when you get here," Shoemaker said, "that's the secret to our success is keeping the menu rotated, new items, people don't know what to expect."
The alligator grilled cheese sandwich is served on a yeast jalapeno cornbread. The focal point is the Cajun grilled alligator meat and prepped fresh every day. Shoemaker also throws in Hansen cheese curds and toasts it in the oven to tie it all together.
"KWWL" asked Shoemaker what was the driving force towards creating the alligator grilled cheese and he said he simply wanted to blow his customers away.
"Everybody else down here was running a Reuben sandwich so we needed something separate that would set us apart that people would walk out the door and say, I just had an alligator grilled cheese sandwich."
The sandwich is also served with a remoulade sauce and olive oil potato chips. The last day to order an alligator grilled cheese is Friday.
